Elaboration

Harvest of each variety at its ideal moment, seeking maximum freshness for the Viognier, balance for the Giró Ros, and varietal expression for the Prensal Blanc. Manual selection and pressing at low temperature. Fermentation for 6 weeks in large-sized first-year French oak barrels.

Appearance

Medium gold color, clean and with notorious legs.

Nose

Expressive and clean nose with tropical and stone fruits (pineapple, peach and lychees), as well as spicy, smoked and vanilla hints. Great aromatic complexity.

Palate

It surprises with an electric freshness and a great structure with a long and persistence finish. A very powerful mouth which highlights the great elegance and balance.

OM PRENSAL BLANC

Rethinking the most emblematic white variety on the island, to achieve its highest level of expression and freshness.

Native pre-phylloxera variety from Mallorca with complex viticulture and very low yields that almost led to its disappearance. We aim to combine the great mouth structure and complexity of the variety with great freshness and verticality.

Elaboration

Two harvests, one early and one later, seeking two antagonistic profiles: verticality and structure. Manual selection and pressing at low temperature. Fermentation for 6 weeks in large-sized first-year French oak barrels.

Appearence

Gold color, clean and with many legs.

Nose

Spicy notes and fruits like pineapple, typical of the variety, and ripe apples.

Palate

The great structure on the palate and the extraordinary freshness that is very well integrated, ends with a very long finish.

OM GIRÓ ROS

Giró Ros is one of the most ancient majorcan grape varieties and it was almost forgotten for its low yields and its complicated viticulture.

of continuing that legacy, we produce this wine

from the best selection of family clones. A rounded, wild,

and elegant wine that evokes the family’s winemaking

Elaboration Two harvests separately selecting the two best clones of Manto Negro from the family. The first clone brings us freshness and tannic structure, while the second contributes fruitiness and the typical sweetness of the variety. Malolactic fermentation and a short aging of 6 months in large French oak barrels, aiming to preserve freshness to the maximum.

Appearence Medium garnet color.
Nose Expressive with red fruit such as red currant and plum, and spicy notes.
Palate The Highlights the overall roundness combined with great freshness and mid-palate with typical wild tannins of the variety. Fine and elegant finish, leaving a very balanced passage.

Elaboration

Manual selection in the vineyard and separate vinification of each variety for subsequent blending in the winery. The Mallorcan varieties are worked on to bring out the original fruit and a mouthfeel with soft tannins and very low alcohols, while the international varieties are processed to achieve extraction and great freshness.

Appearence

Deep ruby color with legs.

Nose

Clean, with plenty of both red and black fruit: ripe strawberries, red and black currants, plum. Slightly smoky spicy notes and hints of vanilla.

Palate

It stands out for its great tannic structure and initial power together with a high freshness and balance. Elegant, deep and persistent exit through the mouth.

Our wine El Galgo elaborated with the most planted variety in our area (el Pla de Mallorca), seeks the finesse, elegance and delicacy of the wines made over the last centuries. We use part of this wine for non-profit purposes in collaboration with BambaProject Kenya.

Elaboration

Hand-selected grapes delicately destemmed and fermented at 25ºC for 2 weeks in stainless steel tanks to preserve the primary aromas. Malolactic fermentation and aging in new big french oak barrels.

Appearence

Garnet color with light intensity.

Nose

Expressive and clean with smoky and spicy aromas typical of the variety, red fruits (strawberry) and white pepper.

Palate

Surprising for the extraordinary finesse and delicacy, with very well integrated tannins that give a very round mouthfeel and with a very long and again very fine and elegant finish. Aftertaste reminiscent of red fruits and spicy notes.
